Mum’s Pear and Fennel Chutney

1.2kg of firm brown pears (approx 5)
1 green apple
500g of white or brown onions (approx 3)
2 cups of sugar
2 cups of apple cider vinegar
1 cup raisins or currants (i use a mix of both)
2tbls fennel seeds (grind in a mortar and pestle)
2tbls of ground cummin
1 tbl salt

Peel and chop pears and apple finely, and the onions a little finer. Roughly chop the raisins. Put everything in a large saucepan and simmer uncovered until think and syrupy, a bit more than a hour or so. I usually make a 6 x the recipe qty so it takes a few hours in 3 big pots if doing big batch. Once it changes colour to a deeper brown it is done.  Spoon into bottles whilst mixture is still hot and then pop the lids on when cold. Using either old or new jars, you must sterilize the jars and lids before bottling. I place the jars and lids on baking trays and pop in the oven on 110C for 30mins.
